A delicious Karwa Chauth special recipe for making sweet Mathri with a crispy texture. These are made with all-purpose flour, ghee, and flavored with saffron and cardamom syrup, perfect for the festive occasion.
In a bowl, add flour and ghee and mix it. Add water as needed to make a semi soft dough. Cover the dough with a damp cloth. Let it rest for at least 15-20 minutes.
Divide the dough into around 8 equal parts. Roll the dough into balls. With a rolling pin, roll each ball into circles, keeping them a little thick. Prick the rolled out dough on both sides with a fork.
Heat at least one inch of ghee in a frying pan over low to medium heat.
Fry the mathris until both sides are a light golden-brown.
For sweet mathri, make syrup by boiling water and sugar in a saucepan over medium heat. Let it boil for about 2 minutes until sticky.
Add saffron strands and green cardamom powder to the syrup and mix well.
Dip the phiki mathri one at a time into the syrup ensuring it's coated on all sides.
Garnish with chopped almonds, pistachios, edible silver leaves, and rose petals.
Store the mathris in an airtight container where they should be good for a month.
