Suji Halwa is a traditional Indian sweet dish also known as Suji Sheera or Rava Kesari. This halwa is a sweet pudding that tastes simply divine and is typically made during festivals like Navratri.
In a heavy-bottomed pan, heat ghee over medium flame.
Add all nuts (almonds, cashews, pistachios, and raisins). Sauté for a few seconds until golden and keep aside.
In the same pan, add semolina, reduce the heat to low, and sauté.
Add gram flour and continue to sauté over low heat until light brown and aromatic, stirring continuously.
Once roasted, add the nuts back into the pan and stir for a minute.
Carefully add warm water to the pan, stirring continuously to avoid lumps.
Let it cook for a few minutes until the water is absorbed.
Add sugar, cardamom powder, and saffron milk, stirring to combine.
Let halwa cook for 4-5 minutes on low heat until it leaves the pan and ghee begins to separate.
Transfer the halwa to serving bowls, garnish with dried rose petals and pistachio, and serve.
