This is a simple, quick, and humble combo from Gujarat that can be enjoyed both separately or together. The curry features a blend of colorful spices and ingredients like tomatoes and sev, while the bajra roti adds a wholesome touch.
In a pan add oil. Once the oil is hot, add the mustard seeds, cumin seeds, bay leaf and asafetida. Let them crackle.
Add onions, green chilies, ginger and curry leaves. Sauté until the onions turn translucent.
Add all the spices – turmeric, red chili powder, coriander powder and salt. Give it a stir.
Add tomatoes. Let this mixture cook until the tomatoes become soft.
Add 1 cup of water and mix it.
Let it simmer and come to a boil when it thickens up a little bit and excess water has evaporated.
Add jaggery and garam masala. Turn off the heat. Add Sev and cilantro. Mix well.
In a plate add pearl millet flour and salt. Knead a smooth and soft dough with warm water.
 Meanwhile heat a tawa.
Make small size balls from the dough.
Dust lightly with flour and roll with a rolling pin.
Place the rolled roti on the hot tawa and cook from both sides.
Serve Bajre ki Roti with Sev Tameta nu Shaak.
