Ragi dosa is very nutritious and protein packed, made with finger millet flour. This recipe requires no fermentation, allowing you to prepare the dosa instantly, making it perfect for breakfast, lunch, or dinner.
In a bowl, add the finger millet flour, semolina, rice flour, green chili, ginger, cumin seeds, cilantro, and salt.
Add the yogurt and 2 cups of water. Whisk to remove any lumps. Cover and set aside for 20 minutes.
After 20 minutes, add another ½ cup of water to adjust the batter consistency.
Heat a cast iron skillet on medium heat, drizzle some oil, and wipe it off with a paper towel.
Take a ladle full of batter and pour it on the pan, filling in any gaps to create a lacey dosa.
Drizzle some oil on the dosa.
Cook the dosa until crispy on the sides. Use a spatula to loosen it and gently remove the dosa.
Serve with your favorite chutney, such as Sambhar, coconut chutney, or tomato chutney.
