A Thai-style sweet and spicy pineapple fried rice that is healthy and quick to make. This dish is perfect for lunchboxes and works best with chilled leftover rice, preventing clumping during stir-frying.
Heat a pan over medium heat and add oil.
Add garlic, ginger, and sauté for a few seconds.
Add onions and cook until fragrant.
Add cashews and cook for about 30 seconds.
Add the red bell peppers, green bell peppers, and peas. Cook for 2-3 minutes.
Add pineapple. Cook, stirring constantly, until the liquid has evaporated.
