Cajun Potatoes

1: Rinse 7-8 baby potatoes in water 3-4 times.

2: Boil potatoes in water with salt until 80% cooked.

3: Press each potato with a flat base glass and set aside.

4: In a mixing bowl, combine corn flour, wheat flour, black pepper powder, and salt.

5: Add water to make a slightly runny batter.

6: Dip each potato in the batter and coat well.

7: Shallow fry the potatoes until golden and crisp.

8: In another bowl, mix mayonnaise, chili tomato sauce, chopped onion, mixed herbs, black pepper powder, salt, and milk.

9: Place the fried potatoes on a serving plate and pour the sauce over.

10: Garnish with chopped onion, coriander leaves, and red chili powder, then serve immediately.
